Where the Earth Meets the Name

Terralta is not just a label—it is a description. Translated as “High Land,” the name serves as a bridge between the physical geography of Destileria El Pandillo and the elevated standard of the liquid in the Terralta bottle. The high-altitude stress of Jesús María forces the agave to work harder, concentrating the sugars and developing the complex, citrus and floral notes that define the region. By combining the mineral-heavy water from 150 meters below ground with agave grown at 2,000 meters above it, Terralta captures a complete vertical slice of the Jalisco highlands.

Felipe Camarena is a master of two worlds: the deep-rooted traditions of a three-generation tequila-making legacy and the precision-driven mind of a civil engineer. At El Pandillo, these two worlds do not just coexist; they collaborate, honoring the soul of tequila while protecting the environment that provides it.

Our Agave

100% Fully Mature, Naturally Grown

El Pandillo is widely regarded as one of the most innovative and quality-focused distilleries in the tequila world. Central to the process is the commitment to 100% natural ingredients, beginning with Highland agave harvested only at peak ripeness, typically between 5 to 8 years.

Unlike many producers, they perform a unique, labor-intensive step: hand-cutting the stems from the agave hearts before cooking, which is known to add bitterness. By removing these stems, they ensure a cleaner, more floral, and naturally sweet profile that is unique to El Pandillo tequilas.

Water Source

The magic of 150 meters

Master Distiller Felipe Camarena treats water as a key ingredient rather than just a dilutant, often saying, “I believe the quality of your water is more important than the quality of the agave; bad water yields a bad product. You need both together.”

The use of deep well water (450+ feet) from the family estate adds textural complexity and earthy flavor rarely achieved in agave spirits – and it is uniquely Terralta.

Steaming

Perfectly Cooked from Top to Bottom

The steaming process is as innovative as the rest of the distillery, utilizing custom-designed stone ovens. They feature a dual-steaming system that applies heat from the top and bottom. This ensures an even cook, preventing the agave at the bottom from “burning” while the top remains undercooked.

Agaves steam for 22 hours, followed by a cooling period that allows the starches to fully convert into fermentable sugars.

The “Felipenstein” Process

Engineering the Perfect Extraction

By applying an engineer’s logic to the family’s ancestral craft, Felipe has created a model for the future of tequila, better known as the “Felipenstein” process. It is a masterclass in mechanical ingenuity, centered around two custom-built machines affectionately named Frankenstein and Igor. Igor gently breaks down the cooked agave fibers without compromising the precious sugars. The fibers are then crushed by Frankenstein, a massive, custom-engineered mechanical tahona that uses railway components from a junkyard that efficiently extract sugars. This unique system replicates the traditional stone-crushing method but with modern precision (3-4 times more efficient) and consistency

Yeast & Fermentation

Fermentation at El Pandillo is a slow, natural process. The distillery uses a native wild yeast originally propagated by Felipe’s grandfather 80 years ago. This stage typically lasts between 3 to 5 days, depending on the weather, allowing the yeast to fully transform the sugars into a rich, aromatic agave juice. The result is a consistent, 100% natural fermentation profile that remains unique to El Pandillo while perfectly capturing the essence of the Highland agave.

Distillation

Twice distilled in custom copper stills, ruthlessly cut to select only the purest heart of distillation. From the still to the bottle, nothing is added – just the honest result of heat, copper, and agave.

Resting

A nuanced approach

El Pandillo follows a philosophy of patience over schedules. Rather than adhering to a rigid calendar, their aging times are expressed as a range rather than an exact number. They are only released when Felipe deems them ready.

His goal is to respect the agave, not replace it. By using well-used ex-bourbon barrels, the wood imparts subtle color and character without overpowering the spirit. This meticulous approach ensures that every Reposado, Añejo, and Extra Añejo maintains a perfect, intentional balance between bold cooked agave and nuanced oak.

Reposado: 6 to 9 months resting

A masterclass in patience and restraint. Terralta Extra Añejo spends 3 to 7 years in wood, resulting in a full-bodied, velvety spirit with decadent layers of dried fruit, cocoa, and baking spices while remarkably retaining its agave clarity.

Terralta Tequila 5 YO Extra Añejo

After 5 years, this exceptional tequila achieves a luxurious depth of dark chocolate and roasted nuts while maintaining the signature Terralta mineral "backbone" and vibrant agave presence.
